Sorbitol, also known as sorbitol, hexanol, D-sorbitol, is a non-volatile polysugar alcohol, stable chemical properties, not easily oxidized by air, easily soluble in water, hot ethanol, methanol, isopropyl alcohol, butanol, cyclohexanol, phenol, acetone, acetic acid and dimethylformamide, widely distributed in natural plant fruits, not easy to be fermented by various microorganisms, good heat resistance. It is not decomposed at high temperature (200ºC), and was originally isolated from mountain strawberry by Boussingault et al. in France. The PH value of saturated aqueous solution is 6 ~ 7, and it is isomeric with mannitol, tyrol alcohol and galactotol, which has a cool sweetness, and the sweetness is 65% of sucrose, and the caloric value is very low. It has good hygrometry, has a very wide range of effects in food, daily chemical, pharmaceutical and other industries, and can be used in food to prevent food drying, aging, extend the shelf life of products, and can effectively prevent the crystallization of sugar and salt in food, can maintain sweet, sour, bitter strength balance and increase food flavor. It can be prepared by heating and pressurizing glucose in the presence of nickel catalyst.

  • Sorbitol occurs naturally in significant amounts in grapes, prunes, cherries, peaches, apples, pears and apricots and in related fruit juices.
    * Sorbitol can be semi-artificially produced from glucose syrup, which can be derived from wheat, potato or cassava starch, and used as a low-calorie sweetener, humectant, bulking agent, texturizer or fat replacer in confectionery, candies, baked goods, diabetic jams, nutritional bars, shredded coconut, chewing gum, chocolate, diet soft drinks, surimi or cooked sausages
  • * In the European Union, sorbitol is labeled as E number E420

Sweetener

Sorbitol is a sugar substitute, and when used in food it has the INS number and E number 420. Sorbitol is about 60% as sweet as sucrose (table sugar).
Sorbitol is referred to as a nutritive sweetener because it provides dietary energy. It is often used in diet foods (including diet drinks and ice cream), mints, cough syrups, and sugar-free chewing gum. Most bacteria are unable to use sorbitol for energy, but it can be slowly fermented in the mouth by streptococcus mutans, a species of bacteria that cause tooth decay unlike many other sugar alcohols such as isomalt and xylitol, which are considered to be non-acidogenic.
It also occurs naturally in many stone fruits and berries from trees of the genus Sorbus.
Health Care, Food, and Cosmetic Uses

Sorbitol often is used in modern cosmetics as a humectant and thickener. It is also used in mouthwash and toothpaste. Some transparent gels can be made only with sorbitol, because of its high refractive index.
Beyond its use as a sugar substitute in reduced-sugar foods, Sorbitol is also used as a humectant in cookies and low-moisture foods like peanut butter and fruit preserves. In baking, it is also valuable because it acts as a plasticizer, and slows down the staling process.

Medical Applications

Sorbitol is also used in the manufacture of softgel capsules to store single doses of liquid medicines.
A treatment for hyperkalaemia (elevated blood potassium) uses sorbitol and the ion-exchange resin sodium polystyrene sulfonate.

Sorbitol alias sorbitol, English name Sorbitol, D-Glucitol, Sorbol, D-Sorbitol, hygroscopic powder or as a white crystalline powder, flakes or granules, odorless, soluble in water (1g dissolved in about 0.45mL water), slightly soluble in ethanol and acetic acid, with a refreshing sweet taste, sweetness about half of sucrose, and sucrose similar calorific value, used as a sweetening agent does not cause dental caries, oral excess can cause diarrhea and digestive disorders.

*Food Industry------Can be used as a sweetener, humectant, chelating agent and tissue modifier.
